1-First of all, we wash the sturgeon well in cold running water. Be sure to use gloves when butchering this fish to avoid injury.
2-Then we transfer the fish to a cutting board and clean it from scales. Sturgeon should be cleaned "against the coat" from tail to head. Next, remove the gills, cut the abdomen along from the head and take out the giblets. The peritoneum is thoroughly cleaned and washed several times.
3-While the process of processing sturgeon is coming to an end, pour water into a large saucepan and bring it to a strong boil. We lower the sturgeon into boiling water for literally a few seconds and then immediately pour cold water over the fish. Then we easily peel off the skin and spikes. We rub the fish with salt and leave it at room temperature for about 40-60 minutes so that the fish gives juice. At this time, we will prepare the sauce.
4-In order to prepare the sauce, we need to boil hard-boiled eggs. Then we clean the eggs and separate the yolk. For the sauce, we need exactly the yolks. In a convenient bowl, rub the yolks with a spoon, then add sour cream, grated nutmeg, breadcrumbs, butter and balsamic or rosemary vinegar. We mix everything thoroughly. You should get a beautiful yellowish uniform consistency.
5-After the fish has started the juice, set the oven to warm up (190 gr.), Lubricate the baking sheet with vegetable oil, cover it with baking paper and lay out the fish, pour plenty of prepared sauce, olive oil on top and sprinkle with the juice of half a lemon. Put to bake in a preheated oven for 20-30 minutes.
6-We take the sturgeon out of the oven, carefully transfer it to a dish covered with lettuce, decorate with vegetables and serve. Bon appetit!
