Shopska salad with grilled chicken
Shopska salad is very similar to Greek, with one addition - they put meat in it. In principle, you can supplement it with any baked meat of your choice.
Shopska salad with grilled chicken
6 servings, 20 min prep
What do you need:
half cooked grilled chicken
2 large sweet red peppers
4 medium crispy cucumbers
300 g colorful cherry tomatoes
1 red sweet onion
100 g Bulgarian cheese
2–3 tbsp. l. lemon juice
5 st. l. olive oil
salt, freshly ground black pepper
What to do:
1. Preheat the grill oven to maximum. Cut the peppers in half, remove the core, grease the skin with oil, put the skin up on the grate, bake until black marks. Transfer the peppers to a bowl, cover with clingfilm and leave for 10 minutes, then remove the skin from the peppers and remove the core with seeds.
2. Disassemble the grilled chicken into fillets, cut into strips.
3. Cut the onion into thin feathers. Cut the peppers and cucumbers into strips, cut the cherry tomatoes in half.
4. Cut the cheese into large cubes. Put all the vegetables in a bowl, mix with chicken and cheese.
5. Whisk lemon juice with oil, salt and pepper. Dress up the salad and serve.
